National Carrot Cake Day celebrates q favorite flavor of cake. In the carrot cake, we get to eat our cake and veggies, too! Carrot cake closely resembles a quick bread from its preparation to its final consistency. Quick breads mix the wet and dry ingredients separately before combining, and the final product is coarser than a traditional cake. Creamy frosting separates the layers and often complements the spice of the cake. Cinnamon and nutmeg go well with the natural sweetness of carrots. Many bakers add nuts or raisins to their recipes as well. The carrot’s natural sweetness may have been selected as a substitute in the Middle Ages when sugar was hard to find or expensive. Carrot cake most likely developed from a carrot pudding which could be savory or sweet.

As Monday's go,
Today was successful again.
John and I got the chores caught up,
Laundry, cleaning, mail and some rest.
We both slept in today - 11am.
John is enjoying the meal planner board,
Because he doesn't have to answer
"What do you want for supper?"
A bit more work with 2 grumpy kitties.
Both are doing the same stupid thing...
Chasing the other until 
they have made each other angry
And one of them snaps for a second.
Then they go to their own corner 
And glare at each other.
Tuesday promises to be
DE-LITEFUL with a a Valleyview visit,
A yummy supper
And possibly quarter auction.

For now a snack and bed!
